To create this vinegar, Giusseppe Giusti carefully selects the best local grapes, which are then pressed in a wine making vat. The fresh juice and must is separated and the must is then cooked down for hours until it becomes sweet and thick. Finally, the cooked grape must is aged in casks to provide the intense, fruity aromas of this delicious balsamic vinegar.
