Use 2 teaspoons seasoning per pound of whole chicken. Mix seasoning with 4–6 tablespoons softened unsalted butter. Rub mixture all over chicken and under skin. Bake breast-up at 425° for 45–60 minutes or until a meat thermometer inserted into breast reaches 165°.
